These are always hard because I’ve seen so many great series of shows that it’s almost impossible to exclude one as on top of them all, and to leave it at 5 I’ll give it a try though.
GTO (Great Teacher Onizuka) - Onizuka Eikichi
Just because the sole idea of a former delinquent and gangmember to become a “respectful” teacher is just hilarious + he is really a great teacher.
Cowboy Bebop - Spike Spiegel
Sort of a anti-hero. He seems like a laid back fellow from the outside, but filled with agony inside. I love(d) his character.
Cromartie High School - Kamiyama Takashi
You have to have the biggest balls around to go to school filled with all sorts of bad-asses, without becoming one of them.
Fullmetal Alchemist (Hagane no Renkinjutsushi) - Maes Hughes
Man who, from the outside, seem like a funny fellow who always jokes around and forces people to look at his adorable daughters picture. Inside though, this man knows more than anyone, and is a very serious and protective person to those close to him. Loved this character from the bottom of my heart.
Ghost In The Shell series. - Togusa
Still holding on to his original human body in the middle of his mechaniced co-workers. All the other members of the Section 9 have more or less cyborg bodies, where as Togusa only has few implants and a cyberbrain. He holds on to his trusty revolver like an old-fashioned police detective, which makes his character stand out, in a positive light.

For those of you who listed [i:3j9lpjl7]Great Teacher Onizuka[/i:3j9lpjl7]: I highly recommend watching the live-action drama. The show actually predates the anime, and was incredibly well-received: in fact, the final episode was the most watched television program ever in Japan. A definite must-see.
